Meet us at White Rose Restaurant at five o'clock, just as the day tourists are making their way out. Somewhere between the last tour bus pulling out and the first lantern coming on, the Ancient Town becomes itself again: and that is exactly when we head in, spending the next three hours exploring it through its heritage, food and culture.

We begin with one of Hoi An’s most distinctive food traditions: delicate white rose dumplings, made by hand in their thousands and still closely tied to the family behind them. Before eating, try folding a few yourself and discover just how much skill sits inside something that looks so simple. From here, Hoi An unfolds in layers rather than a straight line. Food and history constantly cross paths. Stop for bánh mì, where French baguette tradition meets Vietnamese herbs, pâté and fire, and later make room for cao lầu as the walk carries you deeper into the Ancient Town.

Between bites, pass some of Hoi An’s most recognisable landmarks and hear the stories behind the facades. Pause around the Japanese Covered Bridge, continue through the old merchant streets and Market Square, and pass the Fujian Assembly Hall. Together, these places reveal the trading cultures that once turned Faifo into one of Southeast Asia’s great international ports.

And all the while, evening is taking over. Lanterns brighten above the streets, shopfronts glow and the Thu Bon River begins catching their reflections. By the time the walk reaches the waterfront, Hoi An feels very different from the town you entered only a few hours earlier. Finish slowly, with green bean cake and Vietnamese drip coffee, while the Ancient Town settles into the night. Three hours of food, stories and small discoveries through a city that rewards those who stay long enough to see what happens after everyone else starts leaving.
